Easy Chicken Dinner Recipes For Two
Ingredients:
- 2 chicken breasts
- 1 cup breadcrumbs
- 1 cup grated Parmesan cheese
- 1 cup marinara sauce
- 1 cup mozzarella cheese
- Salt and pepper to taste
- 1 tablespoon olive oil
- Fresh basil for garnish
Instructions:
- Preheat your oven to 400°F.
- Pound the chicken breasts to an even thickness.
- In a bowl, mix breadcrumbs, Parmesan cheese, salt, and pepper.
- Dip the chicken breasts in the breadcrumb mixture, coating both sides.
- Heat oil in a pan and sear the chicken breasts until golden brown.
- Place the chicken in a baking dish, top with marinara sauce and mozzarella cheese.
- Bake for 20-25 minutes or until the cheese is bubbly and browned.
- Garnish with fresh basil and serve hot.

- 1 cup rice
- 2 chicken breasts
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 can of diced tomatoes
- 1 cup chicken broth
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions:
- Cook rice according to package instructions.
- Cut chicken into bite-sized pieces and season with garlic powder, paprika, salt, and pepper.
- In a skillet, cook chicken until browned, then remove from the pan.
- Sauté onion and bell pepper until softened.
- Add diced tomatoes, chicken broth, and cooked chicken back to the skillet.
- Simmer for 10 minutes until the chicken is cooked through.
- Serve the chicken and vegetable mixture over rice and enjoy!
